Weeknight Spinach & Gnocchi Bake
  • 1 Tbsp canola oil
  • 1 small onion, diced
  • 1 lb. ground pork, turkey or beef
  • ½ tsp salt and pepper
  • 2 cloves garlic, minced
  • 1 28oz/796mL can crushed tomatoes
  • 1 Tbsp tomato paste
  • ½ tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • 1 Tbsp sugar
  • 3-1/2 cups baby spinach
  • one 17.6 oz. pkg gnocchi, cooked to package directions, drained
  • 1 cup mozzarella cheese, shredded
  1. Preheat oven to 400ºF.
  2. In a large skillet over medium-high heat, sauté onions, ground meat, salt and pepper; breaking up into a crumble with back of spoon, until cooked through.
  3. Add garlic and cook 1 minute more. Add tomatoes, tomato paste, oregano, basil, parsley and sugar. Bring up to a boil, reduce heat to medium-low and simmer for 10 minutes.
  4. Add spinach and stir in to allow spinach to wilt into sauce. Add gnocchi and toss to coat.
  5. Transfer to a 9” x 13” baking pan, top with cheese and bake for 15 minutes.
