Ingredients
  • ½ cup butter, room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 egg
  • 1 teaspoon vanilla
  • 1-1/4 cup flour
  • 1 cup quick-cooking oats
  • 1 cup flaked coconut
  • 1 cup dried fruit ( eg: ½ cup golden raisins and ½ cup dried cranberries)
Instructions
  1. Preheat oven to 375ºF.
  2. In a large mixing bowl cream butter for 30 minutes. Add sugars, baking powder and baking soda; beat until well combined. Beat in eggs and vanilla. Scrape down sides of bowl. Beat in flour.
  3. Stir in oats, coconut and dried fruit. The batter will be very stiff.
  4. Drop rounded teaspoons of batter on to parchment-lined baking sheets. Bake for 8-10 minutes until slightly golden and centre is set. Transfer to wire rack to cool.
