Coconut Rice
Serves: serves 2-4
  • 2 Tbsp butter
  • 1 cup sliced red onion
  • 2 Tbsp chopped garlic
  • 1 cup basmati rice
  • 1 can (400mL) coconut milk
  • ½ cup water
  • ½ cup shredded toasted coconut
  • ¼ cup golden raisins
  • ½ cup chopped fresh mint
  1. Heat butter in a pan over medium-high heat. Add red onion and chopped garlic, sauté 2-3 minutes. Add basmati rice, stir to coat.
  2. Add coconut milk and water to the pan. Bring to boil, cover, reduce heat and simmer for 10-15 minutes until rice is tender.
  3. Stir in coconut, golden raisins. Mix in (or sprinkle on top as shown) chopped fresh mint. Fluff and serve.
