Grilled Turkey Grain Bowl with Cashew Lemon Dressing

Ingredients
CASHEW LEMON DRESSING:
  • ½ cup cashews
  • ¾ cup water
  • 3 Tbsp olive oil
  • 3 Tbsp lemon juice
  • 1 Tbsp honey
  • 2 tsp chopped garlic
  • ¼ tsp salt
  • ¼ tsp pepper
Grilled Turkey Grain Bowl
  • 1 cup baby spinach
  • 1 cup quinoa, cooked
  • 1 boneless, skinless turkey breast, grilled and sliced
  • 1 avocado, sliced
  • 2 slices pineapple, grilled
  • ½ cucumber, quartered
  • ½ turnip or radish, sliced
  • 10 cherry tomatoes, halved
  • ⅓ cup fresh berries: blackberries, blueberries, raspberries, or strawberries
Instructions
  1. To make Cashew Lemon Dressing: Blend all ingredients in a food processor or high-speed blender until smooth.
  2. To make Grilled Turkey Grain Bowl: In a medium bowl layer spinach, quinoa, cooked turkey, avocado, pineapple, cucumber, turnip, tomatoes and blackberries. Drizzle with Cashew Lemon Dressing
