Curried Mango, Turkey and Walnut Salad
- 4 cups cooked quinoa
- 1 cooked turkey breast
- 1 cup mango, diced
- 5 green onions, sliced
- 1 cup walnut pieces
- 1 cup cherry tomatoes, quartered
- Combine all ingredients in a bowl. Combine dressing ingredients in a separate bowl. Drizzle over quinoa mixture and toss.
DRESSING: Mix together 4 Tbsp curry powder, ⅔ cup rice vinegar, ⅔ cup canola oil, 2 Tbsp lemon juice, 4 tsp grated ginger
