Spanish Turkey Stew

Ingredients
  

  • 3 Tbsp canola oil
  • 4 cups onions, chopped
  • 3 cups cooked turkey, chopped, light or dark
  • 1-1/2 Tbsp chili powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1-796 mL can of stewed tomatoes
  • 1 cup water
  • 2/3 cup golden raisins
  • 1/4 cup apple cider vinegar
  • salt & pepper

Instructions
 

  • Heat oil in a large pot over medium-high heat. Add onions and sauté until beginning to soften, about 3 minutes. Add turkey, chili, cinnamon, nutmeg and allspice. Cook for 3 minutes. Add tomatoes with juices, water, raisins and vinegar. Increase heat and bring to a boil. Cover, reduce heat to medium-low and simmer 20 minutes. Remove cover and simmer an additional 10 minutes. Season with salt & pepper to taste, serve over rice.
