Healthy Cauliflower Bean Salad

Ingredients

of beans

I used 3-19 oz/540 mL cans of beans. Use a mix of red kidney, romano, chickpeas, etc.

celery

onion

sliced

cauliflower florets

blanched
1/3 to 1/2
cup
maple syrup

to your taste

cup
white vinegar
1/2
cup
oil
1/4
tsp
dried tarragon
salt & pepper to taste
fresh parsley or cilantro

chopped
Instructions
Combine all ingredients in a bowl and toss. Salt and pepper to taste.
Cover and place in refrigerator and allow to marinate for 24-48 hours. Stir and serve with chopped fresh parsley or cilantro.
