20 Minute Turkey Meatloaf

  • ½ cup zucchini, shredded
  • ¼ cup rolled oats
  • ½ cup onion, finely chopped
  • 1 egg, beaten
  • 1 tsp garlic, minced
  • 1 tsp dried thyme
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 lb ground turkey
  • 1 cup tomato sauce, ketchup, pizza sauce, pasta sauce, barbecue sauce or any combination


  • In a bowl, combine all ingredients except turkey. Add turkey and mix well.
  • Shape meat mixture in a 8-inch microwave pie plate or round shallow bowl. Shape the meat “like a donut” in a thick band around the perimeter leaving a 2-inch empty space in the middle.
  • Cover with waxed paper. Microwave at 100% power (high) for 5 minutes. Turning if your microwave has no turntable.
  • Pour desired sauce evenly over meat. Cover with wax paper. Microwave on 50% power (medium) for an additional 12 minutes or until cooked to 165ºF.
