Irish Barm Brack Muffins

Ingredients
  

  • 1/2 cup raisins
  • 1/2 cup golden raisins
  • 1/2 cup currants, or chopped dates
  • 1 cup brewed black tea
  • 4 cups flour
  • 1 tsp allspice
  • 1/2 tsp cinnamon
  • 1/3 cup packed brown sugar
  • 1 tsp baking powder
  • pinch of slat
  • 1 egg
  • 1/2 cup butter, melted
  • granulated sugar for dusting

Instructions
 

  • In a large bowl, soak the dried fruits in the tea. Leave at least 6 hours or overnight.
  • Preheat oven to 400ºF. Grease 12-cup muffin tin.
  • Mix all dry ingredients in a large bowl. In separate bowl, beat egg and melted butter. Add the fruit (well strained) and mix to blend.
  • Add flour and mix just until blended. Don't over mix!
  • Spoon into prepared muffin tin (you can add a foil-wrapped quarter to one of then for fun..). Bake for 30 minutes or until golden in colour. Allow to cool and enjoy!
