Weeknight Thai Turkey Flatbread

Ingredients
  

  • 1 300 g package flatbread
  • 1-1/2 cups turkey breast, cooked, cubed
  • 1/3 cup roasted red peppers
  • 1/4 cup green onion, sliced
  • 1 cup mozzarella cheese, shredded
  • Thai Peanut Spread
  • 1/2 cup water
  • 1/3 cup all-natural peanut butter
  • 2 Tbsp soy sauce
  • 1 Tbsp lime juice
  • 1 tsp minced ginger
  • 1 tsp minced garlic
  • 1 tsp brown sugar
  • 1 tsp Sriracha Sauce, optional

Instructions
 

  • Preheat oven to 425ºF.
  • To make Thai Peanut Spread: Blend all ingredients together in
  • a blender until smooth. Add more water if needed to get a
  • spreadable consistency.
  • Place flatbread on a baking sheet. Spread with peanut sauce,
  • reserving a third for dipping later. Top with turkey, red peppers, green onions and cheese. Bake 8 to 10 minutes until crust is golden. Serve drizzled with Sriracha sauce if using.
