Looking for a unique cookie to compliment to your usual holiday baking?
I love ‘snowball cookies’ on the holiday cookie tray. My favourite has to be these Double Chocolate Snowballs I made last year. They look so cute, round and really messy with a thick coat of icing sugar. It goes all over your hands, but is totally worth it!
These Mandarine Orange Snowballs can be made with any dried fruit that you like: pineapple, apricots, cherries or even dates.
I have s soft spot for Mandarin or Clementine oranges around the holidays… see my post Clementine-Chocolate Dipped Shortbread Cookies. I found these dried mandarin orange slices at my local Costco store and just had to try them… results were yummy!
Mandarin Orange Snowballs

- 1 cup unsalted butter, room temperature
- 1 cup sugar
- 1 large egg
- 1 Tbsp vanilla
- 1 tsp salt
- 2-1/2 cups all-purpose flour
- 2 cups salted cashews, finely chopped
- 1-1/3 cups dried mandarin orange slices, or any dried fruit, finely chopped
- confectioner’s sugar for rolling
Instructions
- Cream butter and sugar with electric mixer on high for 3-4 minutes. Reduce speed to medium; mix in egg, vanilla and salt until combined. Reduce speed to low, add flour in 2 or 3 batches until just incorporated. Stir in fruit and nuts.
- Flatten the dough into a disk, wrap with plastic and refrigerate for 2 hours.
- Preheat oven to 350ºF. Roll dough into 1-inch balls and place on parchment-lined baking sheets. Bake 12-15 minutes until barely golden on the bottom. Transfer to racks and cool completely.
- Roll evenly with confectioners sugar before serving.
