Looking for a unique cookie to compliment to your usual holiday baking?

I love ‘snowball cookies’ on the holiday cookie tray. My favourite has to be these Double Chocolate Snowballs I made last year. They look so cute, round and really messy with a thick coat of icing sugar. It goes all over your hands, but is totally worth it!

These Mandarine Orange Snowballs can be made with any dried fruit that you like: pineapple, apricots, cherries or even dates.

Servings 48 -60 cookies

Ingredients
  

  • 1 cup unsalted butter, room temperature
  • 1 cup sugar
  • 1 large egg
  • 1 Tbsp vanilla
  • 1 tsp salt
  • 2-1/2 cups all-purpose flour
  • 2 cups salted cashews, finely chopped
  • 1-1/3 cups dried mandarin orange slices, or any dried fruit, finely chopped
  • confectioner’s sugar for rolling

Instructions
 

  • Cream butter and sugar with electric mixer on high for 3-4 minutes. Reduce speed to medium; mix in egg, vanilla and salt until combined. Reduce speed to low, add flour in 2 or 3 batches until just incorporated. Stir in fruit and nuts.
  • Flatten the dough into a disk, wrap with plastic and refrigerate for 2 hours.
  • Preheat oven to 350ºF. Roll dough into 1-inch balls and place on parchment-lined baking sheets. Bake 12-15 minutes until barely golden on the bottom. Transfer to racks and cool completely.
  • Roll evenly with confectioners sugar before serving.
