Mom’s Awesome Meat Sauce

Everyone needs a killer pasta sauce in their recipe chest, right? Look no further it’s Mom’s Awesome Meat Sauce!

Each month this year I’ve been introducing you to some of the recipes that my mom was famous for – at least in our family. She made a killer lasagna, just a fact. At the heart of the recipe was the slow-cooked meat sauce that made it rich and delicious.

As you know, here on EatInEatOut™ The Blog I like to stick to recipes that can be made in 30 minutes or less. I know people have busy lives, on the go, no time to cook. Well sometimes to get the best results you just have to take a moment, chill out and cook it low and slow. I like to make Mom’s Awesome Meat Sauce when I have a free 90 minutes on the weekend. That way I can make a double batch and freeze it in serving-sized containers. Then on a busy weeknight it’s easy to pull out, thaw in the microwave, and spoon over pasta or veggies. Comfort food perfection!


Mom's Turkey and Mushroom Pasta Sauce_sq1 Mom's Awesome Meat Pasta Sauce Mom always used beef in her sauce, but it can be made with any meat: beef, turkey, pork or lamb… all good. This time I’m not spooning it over pasta, instead I’m using my new favourite zucchini noodles again. Love these. I know, I’m a bit obsessed…

I don’t think I told you guys what brand of spiralizer I have been using. It’s the Paderno World Cuisine Spiralizer. Many food bloggers have done the work comparing brands and this one always tests out the best, so I went with that one. It works very well to create fine or medium noodles or wide flat ribbons. Spiralizer_1 Sprializer_2 Back to the sauce… do you like rich hearty tomato sauce with mushrooms, onions and garlic? If you’re inside voice said… yah man… than Mom’s Awesome Meat Sauce is for you. O.K. so I may have added my touch to it with a splash of white wine, but it’s still mostly her original recipe. It may take an hour to simmer, but so totally worth it. My thinking is with only two weeks left before the back-to-school frenzy – you better get some sauce in the freezer!

Mom's Turkey and Mushroom Pasta Sauce_3 Mom's Turkey and Mushroom Pasta Sauce_2 To Make Zucchini Noodles: Put 2-3 zucchini through the sprializer. Add 1 tbsp butter to a pan over med-high heat. Sauté zucchini noodles, turning, for 1-2 minutes. Remove from heat. Do not overcook or they will become watery and mushy.

Serve as a side dish sprinkled with Parmesan cheese, spice them up with hot pepper flakes, or topped with Mom’s Awesome Meat Sauce.

Ingredients
  

  • 1 lb ground turkey, beef, lamb or pork
  • 227 g/8oz package mushrooms – white, cremini any kind will work
  • ½ cup chopped onion
  • 1 - 6 oz can tomato paste
  • 1 can, 398mL/14 oz can tomato sauce
  • 1 clove garlic, crushed
  • 1 tsp dried basil
  • 1 tsp dried parsley flakes
  • 1 tsp sugar
  • 1 tsp salt
  • ½ tsp dried oregano
  • ¼ tsp pepper
  • ½ cup white wine
  • 1 cup water

Instructions
 

  • Brown meat, mushrooms and onions in a pan over med-high heat. Add all remaining ingredients, reduce heat and simmer 1 hour.
  • When cooled, divide into 2 containers and freeze. Will keep well up to 6 months. When ready to use, defrost in refrigerator overnight and re heat on stove or in microwave.
  • Serve or any pasta or bake in lasagna, stuffed shells, casseroles.... the possibilities are endless!
