ReInvented Reuben Sandwich

Do you dream about food all the time, like me? If you said yes, then this ReInvented Reuben Sandwich is a dream come true!

I really really love a great sandwich. Who doesn’t love the versatility… tons of different fillings, wrapped in tons of different breads… infinite possibilities!

The Reuben sandwich, traditionally corn beef, swiss cheese, sauerkraut with Thousand Island dressing on toasted rye, is a winner. But what if you have no corned beef, sauerkraut or rye bread? REINVENT!


It all started when I made my last loaf of Spiced Walnut and Date Bread. I love that bread. While enjoying a slice, my mind started thinking about how this would make an awesome sandwich… one thing led to another… and the ReInvented Reuben Sandwich was born!

ReInvented Reuben Sandwich_1 So how did it happen?

I had no corn beef, I did however have leftover roast beef that I could slice thinly. Check.

I had no sauerkraut, but I did have some left over cold slaw in the fridge. Check.

I had swiss cheese. Yeh!

No Thousand Island Dressing. If you have some, use it, if not, I used some mayo.

No rye bread, but I did have this delicious bread with walnuts and dates. Check.

ReInvented Reuben Sandwich_3sq It’s simple.

1. Bake a loaf of my Spiced Walnut and Date Bread.

2. Slice two slices and toast to golden brown.

3. Layer with swiss cheese, roast beef, cold slaw, Thousand Island Dressing or mayonnaise and a dill pickle on the side.
