Putting together a delicious brunch this Mother’s Day? Here’s 5 brunch recipes that Mom will love!

I love recipe roundups (a quick list of 5 or 10 recipes based on a theme) that make event planning so much easier. This time we’re planning a brunch,. Whether it’s Easter, a bridal shower or Mother’s Day, a weekend brunch is an event everyone loves, loves, loves!

Layout 1 The great thing about brunch is that it marries two great meals in one smorgasbord of goodness – breakfast and lunch. Muffins, eggs, casseroles, tarts and cakes are all welcome on the brunch buffet table. Here are five of my favourite recipes that I recommend including in your brunch plans.

Healthy-Morning-Glory-Muffins_5 Let’s start with those that are looking for breakfast… how about a really healthy muffin? These Healthy Morning Glory Muffins deliver on nutrition and on taste.

Assorted-Sub-Gruyère-Strata_4 Some people just have to start the day with something hearty; with eggs, ham and cheesy goodness. This Assorted Sub Greyère Strata is just the ticket!

Steak-Egg-Salad It’s handy to have a recipe that’s simple, can be made a day ahead and is guaranteed to please everyone. My take on the classic Cobb Salad is the perfect thing. This Steak & Egg Salad is made with leftover steak, and each person can assemble their own to get it just right.

Lemon Poppyseed Yogurt Cake_1 You’ve got to have a couple of show-stopper desserts on the table and a Bundt cake is a crowd pleaser. Always moist, tender and delicious, this Lemon Poppy Seed Yogurt Cake is the perfect gift for Mom!

Strawberry Rhubarb Tart_4 For those that like something a little different, these Strawberry-Lime Rhubarb Tarts with Mascarpone Whipped Cream are a must. I love the tart fresh taste of rhubarb and lime, such a perfect contrast to the sweetness of strawberries and whipped cream… yum.

I hope this Mother’s Day is a perfect one. Enjoy!
